Was Shrimp/ Now Healthy Cashew Salad Recipe

Mom has been trying to eat Vegetarian while she is having her cancer treatments. We have really enjoyed all the Olive gals recipes that they have shared with us, but sometimes you just need comfort food, something familiar. I tried to convert my shrimp salad recipe into all healthy ingredients and we think it turned out delicious. Wyatt tasted it and even he thinks it tastes good and he believes that fresh/raw fruits and vegetables are foreign substance and should not be put into his body.
  1. 6-8 oz uncooked Spelt Pasta(or what ever kind you like)
  2. One cup shredded carrots
  3. One cup cashews
  4. One can sliced olives
  5. One bunch green onions sliced
  6. One small zucchini sliced thin
  7. One diced tomato
  8. One diced avocado
  9. One cup frozen or fresh peas
  • One cup Veginase
  • 1/4 tsp Bon-Appetite
  • 1/4 tsp Garlic
  • 1/4 tsp Pepper
  • 1/4 tsp Dill Weed
  • 1/4 tsp Parsley.
  • While pasta is cooking, combine all veggies, mix Veginase with spices. Drain cooked pasta, rinse in cold water or let set in ice water for 3 minutes and drain. Fold all ingredients together until covered with dressing. Best if refrigerated for one hour.
